Best Plant Based Vegan Zucchini and Mushroom Lasagne (Yum)!

 

Even though, I absolutely love how drinking home made green juices, enjoying colorful salads and eating lots of fruit makes me feel and look, sometimes a girl just needs something comforting and decadent. This delicious plant based lasagna recipe which I found on the wonderful YouTube channel: “The Whole Food Plant Based Cooking Show”, https://plantbasedcookingshow.com/ absolutely hits the spot!

A real crowd pleaser; each time I make this for guests or my daughter, there are no leftovers. The ingredients are staples in almost every household – a well balanced mixture of herbs makes this so tasty on the palette and it’s really hard to tell that this lasagna dish is meatless. I did not use canned tomatoes instead, blended fresh tomatoes with sun dried tomatoes (the sun dried tomatoes replaces the tomato paste from a tin. Less acid and chemicals baby)! Cooked the blended sauce so that it’s not watery as instructed in the video. The topping is a decadent but delicious layer of blended (it’s a blendy kind of recipe) cashews and herbs.
